Fructose is a simple sugar where as sucrose is a disaccharides. This may shock some, but sucrose is made of one ring of glucose and one ring of fructose. So, if you are eating “cane sugar,” you’re still eating 50% fructose.

In small amounts, there is nothing wrong with non-GM high fructose corn syrup.

Here is why it is bad – fructose bypasses the normal regulations designed to keep blood sugar stable. In normal metabolism, glucose provides a feedback mechanism within red blood cells and the pancreas to keep blood sugar at target concentrations. As a result, consumers don’t get the appropriate feedback and short-term diabetic conditions can result.

Normally, blood sugar (glucose) is metabolized through glycolysis. Phosphate is added destabilize glucose where it is then converted to fructose with a phosphate. Consuming fructose means that there is no glucose to provide equivalent feedback to other tissues and cells in the body that they have the energy they need. As a results of the absence of this feedback, the brain doesn’t know it has the energy it needs, the body tends to be “hungrier,” and changes in fat and protein metabolism don’t occur.

So, fructose is a normal part of metabolism and is not harmful on its own. However, in large amounts, combined with high fat and high protein diets, it is becoming a major problem for the health of Americans.

For those with high sugar diets, the reason why cane sugar is better is because the two sugars get split first, releasing fructose and glucose. As a result, the feedback mechanism for sugar metabolism isn’t completely bypassed.
